Why You’ll love These Raspberry Cinnamon Rolls

  • Soft and Fluffy – You won’t even be able to tell the difference between these and dairy-based cinnamon rolls. These are just as soft, just as fluffy, just as gooey as you remember.
  • Flavorful – The balance of the tart raspberries with the sweet white chocolate pairs so well together, you will adore the flavor of these
  • Prep Ahead – I love that these can be made ahead, especially when prepping for the holidays and I know you’ll love it too!

Ingredients for Raspberry Sweet Rolls:

Flour

We are using all-purpose flour for the recipe. We like to test and use this flour because it’s easily accessible, budget friendly, and everyone usually has it on hand.

Substitute:

Bread flour will also work in a 1:1 substitute with no other changes needed. It will lead to a chewier cinnamon roll because of the higher protein level.

Whole Wheat flour can also be subbed 1:1 but need another tablespoon on non-dairy milk added because it absorbs more liquid. Also note that whole wheat flour has a more natural taste that will alter the ending flavor of these cinnamon rolls compared to all-purpose flour.

Spelt flour usually needs a tablespoon less flour, but not always. Because of the higher protein for this flour, it will result in a more dense cinnamon roll, and have a similar issue in taste as the whole wheat flour.

Yeast

We are using active dry yeast for this recipe.

Substitute: You can also use instant yeast with no other changes needed to be made.

We do also have a no yeast vegan cinnamon roll recipe if you are looking for an even faster recipe that doesn’t need any rise time. Note: these are not as soft and fluffy without the yeast.

Raspberries

You can use frozen or fresh raspberries for this recipe.

Substitute: This recipe will also work with any other berries as well! Try strawberries, blueberries, or blackberries!

Vegan White Chocolate

White chocolate and berries just go together so beautifully. We are using regular sized chips. If you can only find the minis, you may want to reduce the chips by half.

Substitute: You could also do this with vegan milk or dark chocolate chips as well or even chop up a vegan chocolate bar.

Non-Dairy Milk

The truth is any non-dairy milk will work; however, we really like to use a soy milk because it has a higher protein content. We have personally found that the higher protein in the non-dairy milk helps the structure of the dough at the end.

Substitute: You can also use water instead of non-dairy milk but note in that non-dairy milk we are using the sugar to help jump start the yeast. It also helps because of the fat in the milk that you can’t get from water.

Non-Dairy Butter

You want to choose a non-dairy butter that lists oil as the first ingredient, not water. We personally use the Country Crock plant based avocado oil sticks. We have used these for dozens of recipes and it mimics dairy-based butter beautifully.

Instructions

For the Dough

  • In a large bowl, whisk together 3 ½ cups flour, 2 ¼ teaspoon yeast, and 1 teaspoon salt.  Then, add in the 1 ½ cups plant based milk and ¼ cup maple syrup.  Using a spatula, fold until mostly combined.  Sprinkle a little more flour if needed to not be sticky and form a ball.

  • Once ball is formed, grease the same bowl mixed in and place the dough ball back into the bowl. Cover with a towel or plastic wrap and let sit for 60-90 minutes in a warm, draft free place until doubled.

For the Filling

  • In a medium saucepan, add 10oz frozen raspberries, 2 tablespoon sugar, 1 tablespoon cornstarch, and ½ cup water. Bring to boil, and continue boiling 5 minutes, or until sauce is thick. Strain sauce through a mesh strainer to remove seeds. Let cool.

  • Once dough has doubled in size, pull out the dough and lay it out on a lightly floured surface.  Using a rolling pin, roll dough into an approximately 17×25″ rectangle that is ¼″ thick.  Spread the filling mixture evenly across dough.

  • Carefully roll into log from the longest side up. One completely rolled, place seam side down. Cut into even sized pieces – 9 for larger cinnamon rolls or more for smaller ones.  Place into a greased 9×13 baking dish and cover. Cover and let rise again for 45-60 minutes or until doubling.

  • While waiting to rise, preheat oven to 350˚F (177˚C). Once heated, place dish into oven and bake for 30-35 minutes.

For the Frosting

  • While rolls are cooking, melt ½ cup white chocolate chips for 30 seconds at a time until completely melted and smooth.

  • In a bowl, cream ½ cup butter for 2-3 minutes. Add in powdered sugar 1 cup at a time until combined well (up to 2 ½ cups). Pour in melted white chocolate and fold together. Add in 1 tablespoon dairy free milk at a time until desired texture is achieved.

  • Remove cinnamon rolls from oven and let cool for 10 minutes. Then top with homemade frosting. Best served warm.

Frequently Asked Questions:

Where can I find vegan white chocolate?

You can make your own white chocolate chips using our vegan white chocolate recipe.
Additionally, there’s Pascha and Enjoy Life that make some too.

Can I prep these ahead?

Yes!  You sure can!  There are two options.

Once you make the dough and cover it to rise, you can place the bowl in the fridge up to 2 days before you plan to use it.

You can make the entire recipe and then store your cinnamon rolls in an air tight container in the fridge for 5 days.

Can these be Top 9 Allergen Friendly?

Unfortunately, at the time, we cannot recommend using a gluten free flour with this recipe.

Otherwise, as long as you use a safe dairy free milk, (like we said Oat is our favorite) then you will be all set.
