S’mores Granola Bark – Peas and Crayons


This tasty gluten-free s’mores granola bark features a layer of crispy granola topped with melted chocolate, cinnamon kissed graham crackers and fluffy marshmallows.

This s’mores bark will quite literally have everyone coming back for more.

It’s crunchy, chocolatey, and the most glorious twist on s’mores that’s perfect for parties and after school snacking.

Around here granola is eaten by the fistful so, to shake things up a bit, I started making granola bark as a special treat for the kiddo. It’s often stolen to bring into work and school and if I want to get any to myself I have to make it often so I can hide a little stash of it.

Allergy Friendly Options + Substitutions

I used Simple Mills Honey Cinnamon Sweet Thins for a gloriously gluten-free granola bark. They have the same delicious taste and texture as graham crackers but are GF.

Not gluten-free? Make them with golden grahams or broken pieces of graham crackers and you’re good to go!

Anything goes when it comes to s’mores. You can even toss some chopped up peanut butter cups on top of your bark if you’re feeling wild.

The the granola can be made with or without nuts depending on allergies + preferences.

Feel free to use either milk or dark chocolate (I used milk chocolate for a classic s’mores flavor) and you can use either melting wafers or chocolate chips for your chocolate.

I like to used sliced almonds for a little nutty crunch in my granola but finely chopped pecans or walnuts also work great.

As for the marshmallows, I would avoid those teeny tiny mini marshmallows in the little sprinkle container because they’re chalky and tough.

The small squishy ones in the bag work best. There are conventional ones (Jet-Puffed or store brands) and even delicious vegan marshmallows (Dandies) and in a pinch you could chop up full sized marshmallows if you don’t have mini ones on hand.

Gluten-free S’mores Granola Bark

Have fun with it! You can even turn this into a fun Summer activity for the kids and let them help make decorate the granola bark themselves. My daughter was super involved in helping me make (and devour) this recipe!

  • Preheat oven to 300°F with wire rack in the center/middle position. Line an 11×17-inch rimmed baking sheet with parchment paper for best results.

  • In a large bowl, whisk together (¼ cup) maple syrup, (3 TBSP) coconut oil, (2 TBSP) honey, (2 teaspoons) vanilla and (¼ teaspoon) salt.

  • Add (2 cups) oats and (1 cup) sliced almonds and mix well to coat.

  • Use a silicone spatula or wooden spoon to transfer the granola mixture onto the parchment paper and spread it out into a super thin layer. Pat to flatten, adding pressure so the granola is nice and compact and most of the parchment is covered.

  • Bake for 20 minutes. Rotate the pan (180 degrees) for even toasting. Then bake for an additional 10-15 minutes or until golden in color. Ovens vary from home to home so just keep an eye on it and yank once it’s your personal level of golden perfection!

  • Once you remove the granola from the oven, allow it to cool on the baking sheet until completely cooled. This will give it the necessary time to get that signature crunch we all know and love. (The granola will not crisp up until it has cooled.)

  • Once the granola has fully cooled, melt the chocolate wafers according to the package instructions. If melting milk chocolate chips, add to a heat safe bowl and heat with in the microwave for 30 second intervals, stirring very well between each interval.

  • Using a zig-zag motion, pour melted chocolate over the sheet of granola and use a silicone spatula to smooth it into an even layer.

  • While chocolate is still glossy and wet, immediately add toppings.

  • Allow the bark to fully cool and break into shareable and snackable pieces. Enjoy!

If you’re not making a gluten-free version of the bark you can 100% use golden graham cereal or crushed graham crackers in place of the gluten free graham crackers. Whatever you have on hand!
