KINARA BY VIKAS KHANNA PRESENTS FORGOTTEN FLAVOURS CHAPTER III: COAST TO COAST

On 21 November, Kinara by Vikas Khanna at JA Lake View Hotel will welcome Michelin-acclaimed Chef Vikas Khanna for the third chapter of its Forgotten Flavours dining series. Titled Coast to Coast, this intimate, one-night-only experience will take just 60 guests on a thoughtfully curated journey through India’s eastern and western coastal traditions, bringing together the artistry of Indian fine dining, carefully selected wines and the evocative world of fragrance.

Together with Chef Ashish Kumar, Chef Vikas will personally present an exclusive menu inspired by the ingredients, culinary traditions and cultural influences that have shaped India’s coastal cuisines. The evening will be complemented by curated wine pairings from Torres and a distinctive collaboration with Dubai-born luxury fragrance house Kala Huis, whose fragrance-inspired welcome cocktail and introduction of After the Gesture will bring another layer of sensory storytelling to the experience.

With a single seating from 7:00pm, the evening is priced at AED 900 per person, inclusive of the specially curated menu, Torres wine pairings and a welcome cocktail.

A culinary journey shaped by the sea

At the heart of Coast to Coast lies a celebration of the communities, ingredients and culinary traditions that have defined India’s coastal regions for generations. From the fragrant spices of the western shores to the delicate balance of flavours found along the eastern coastline, the menu draws inspiration from the country’s diverse maritime heritage.

Guided by Chef Vikas Khanna’s distinctive culinary vision and brought to life alongside Chef Ashish Kumar, the experience honours time-honoured preparations while embracing the creativity and precision of contemporary Indian fine dining.

Kinara’s signature open kitchen provides an intimate setting for the evening, offering guests a closer connection to the craftsmanship behind each course. Live culinary moments and musical entertainment will complement the experience, creating an atmosphere that is both engaging and refined.

Chef Vikas Khanna shares:

“India’s coastal cuisines tell extraordinary stories of people, places and traditions shaped by the sea. What fascinates me is how ingredients and techniques have travelled between communities, creating flavours that are both deeply rooted and beautifully diverse. With Coast to Coast, we wanted to honour these traditions while presenting them through a contemporary dining experience. Our collaboration with Kala Huis adds another dimension to that storytelling, exploring how fragrance, much like food, can evoke a sense of place, awaken memories and connect us to our heritage. I look forward to sharing this very special evening with our guests in Dubai.”

A menu of considered contrasts

The specially curated menu unfolds as a progression of regional flavours, textures and techniques, each course offering a contemporary interpretation of India’s coastal culinary traditions.

The evening opens with Bharuchi Spiced Paneer, followed by Charred Bharli Vangi, featuring delicately stuffed baby aubergine. The next course introduces the distinctive depth and complexity of Balchão, presented as a choice of mushroom or prawn.

A comforting yet elegant Kerala Vegetable Stew, accompanied by mini uthappam and ghee, follows before the menu reaches its centrepiece: a choice of Cauliflower Steak Chettinad or Lobster Chettinad, served with neer dosa and ragi roti.

For the final course, Nolen Gur Baked Rasogulla brings together caramelised cottage cheese and mishti doi ice cream, offering a delicate balance of sweetness and texture in a contemporary interpretation of a cherished Indian dessert.

An expression of food and wine

Complementing the culinary journey is a considered selection of wines from Torres, chosen to bring harmony, contrast and depth to the distinctive flavours of each course.

The experience begins with the aromatic, floral notes of Viña Esmeralda 2025, paired with the Bharuchi Spiced Paneer, followed by Fransola 2022, whose freshness and acidity complement the Charred Bharli Vangi and Balchão.

Purgatori 2022 introduces warmth and character alongside the Kerala Vegetable Stew, while Celeste Reserva 2020 accompanies the expressive spices of the Chettinad course. The evening concludes with Floralis Moscatel, whose delicate floral sweetness provides an elegant finish alongside the Nolen Gur Baked Rasogulla.

Together, the pairings create a dialogue between Indian culinary heritage and the art of winemaking, adding another dimension to the evening’s exploration of flavour.

Beyond the plate: A sensory collaboration with Kala Huis

Extending the experience beyond gastronomy, Coast to Coast brings together Kinara and Kala Huis, a Dubai-born luxury house shaped by culture, whose philosophy shares a natural connection with the culinary storytelling at the heart of Forgotten Flavours.

Rooted in an appreciation for craft, culture and heritage, Kala Huis explores the relationship between places, people and traditions, translating their stories into contemporary expressions. Conceived in Dubai and composed in Grasse, its fragrances give form to the emotions, rhythms and rituals of places where craftsmanship and heritage are woven into everyday life.

For this exclusive evening, Kala Huis will introduce After the Gesture, a fragrance from its new collection inspired by Lucknow’s small gestures of care, consideration and hospitality.

The amber-woody composition opens with Bergamot, along with pink pepper and saffron , ingredients from the Indian kitchens, before settling into the deep, comforting notes of vetiver and wood. An evocative expression of the impression that remains long after an encounter, the fragrance captures the warmth and quiet elegance of Indian hospitality.

Inspired by After the Gesture, Kala Huis will also curate a bespoke welcome cocktail, translating the fragrance’s character into a complementary expression of flavour and aroma. This creative interpretation offers guests an introduction to the evening’s sensory journey, bringing together the distinct yet interconnected worlds of fine dining, perfumery and mixology.

The collaboration reflects a shared appreciation for cultural heritage and the ability of both food and fragrance to evoke memories, connect people and tell stories that transcend generations.

Sagar Ramsinghani, co-founder of Kala Huis, “At Kala Huis, we believe fragrance can give form to the unseen language of a place. Our collaboration with Kinara brings together two forms of craftsmanship that are deeply connected to culture and heritage. Through After the Gesture, we wanted to introduce guests to the warmth and generosity of Indian hospitality, expressed through scent and reimagined in a cocktail created especially for this evening.”

An intimate celebration of culinary heritage

With Forgotten Flavours Chapter III: Coast to Coast, Kinara by Vikas Khanna continues its exploration of India’s extraordinary culinary legacy, revealing the traditions, influences and personal stories that give each region its distinctive identity.

More than a celebration of coastal cuisine, the evening offers an opportunity to experience Indian gastronomy through a contemporary lens. From the artistry of Chef Vikas Khanna and Chef Ashish Kumar to the thoughtfully paired Torres wines and Kala Huis’s evocative interpretation of fragrance, each element contributes to a carefully considered dining experience.

With just 60 places available, Coast to Coast presents a rare opportunity to join Chef Vikas Khanna in person for an evening where culinary craftsmanship, cultural storytelling and sensory discovery come together at Kinara.
